Turkey & Pesto

Turkey & PestoI credit my wife with this delicious wild turkey recipe.  With a little ingenuity and only a few things from the pantry, she made a mouth-watering, plate emptying, fight for the last piece dinner, that we all enjoyed!

Ingredients (serves 2)

1 Wild turkey breast

1/2 cup of basil pesto

1-1 1/2cup of mozzarella cheese

2 tsp of parsley flakes

2 Tbls of olive oil

14 oz can of petite diced tomatoes

1 Box of Linguini Noodles


Cut turkey breasts perpendicular to grain into +/-  1/2″ thick sections.  Spread 1/4 cup of basil pesto evenly across the bottom of a 13×9 baking dish.  Place turkey sections on top of pesto base and cover with another 1/4 cup of pesto.

Cover and bake at 375°F for 25-30 min.

After 30 min, remove from oven and cover turkey sections with mozzarella cheese and sprinkle parsley flakes over cheese.  Return to oven for 5 min.  Then turn oven to broil for an additional 5 min.

Serve over Linguini noodles tossed in 2 Tbls of olive oil and a layer of tomatoes.
