Swiss Steak

Swiss Steak is a fantastic and incredibly simple dish to create and equally delicious.    Essentially stewing the meat it is impossible to come away with a dry or tough piece of venison.

Ingredients (serves 4)

4 venison steaks

1/2 of a sweet onion (sliced)

1 sliced bell pepper

8 oz of mushroom pieces

3 diced tomatoes

15 oz of tomato sauce

1 teaspoon of salt

1 teaspoon of pepper

Set a large electric skillet to medium heat.  Tenderize each steak.  Place a layer of tomato sauce in the skillet prior to adding the steaks.  Add sliced onion, sliced pepper, mushrooms, diced tomoates, remaining sauce, salt and pepper over the top of the steaks.  Allow to simmer for 2 hours.  Check heat occassionally, the ideal temperature is just above simmer.  The meat will practically fall apart and can be cut with a fork!
