A favorite way to enjoy the harvest and to preserve the meats of game is to dry it into jerky with a mix of seasonings. Everyone has a favorite and their own special recipe. We at DEER30 Outdoors have several in fact. One of which I am going to share with you today. It is simple, easy, delicious, and is great for a snack around the house or to put in your pack on your next hunting, hiking, or camping trip.
1-2 lbs of deer meat sliced thin (1/4″ max)
1/2 cup of Worchester sauce
1/2 cup of soy sauce
1/2 teaspoon of ground black pepper
1 tablespoon of garlic
1 tablespoon of onion powder
1 tablespoon of salt
Mix all seasonings in a large bowl thoroughly. Add the sliced meat and continue to mix to ensure good coverage of each piece. Allow the meat to marinade for 24 hrs in the refrigerator. After marinating, set your oven temperature to 170 degrees. Place each piece across the rack (note: it is a good idea to line the bottom of the oven with aluminum foil to help catch and drippings and to make for easier clean up). Allow the meat to bake for 4-6 hours checking for doneness every 30 min after 4 hours has been reached. Baking times will vary depending upon the oven and the thickness of each piece. If using a dehydrator, it can take up to 6-8 hours and you will want to rotate your trays every hour.
