Deer Chili

Its fall and its football season!  What better way to warm yourself up at a tailgate party on a cool fall day than a bowl of delicious chili.  Like beef, ground deer meat makes for wonderful chili.  Everyone seems to have a recipe for their “special” chili, so here is Randy’s:


2 lbs ground deer meat

4 large diced tomatoes (or 2 large cans)

1 Red Bell Pepper

1 Green Bell Pepper

2 14.5 oz cans of Dark red Kidney Beans

1 Onion

8 oz of diced mushrooms

2 large potatoes

14.5 oz of tomato sauce

1 tsp. of oregano

1 tsp. basil

1 tbls. garlic

1 tbls. Texas Pete®

3 tbls of chili powder

1 tsp of black pepper

1 1/2 tbls of salt

Brown burger until well done.  While burger is browning, chop onion, potatoes and peppers and skin and dice the tomatoes.  Place all you vegetables in a 4 quart pot.  Add kidney beans, mushrooms, sauce, and seasonings.  Add well done burger.  Allow to simmer for 45 min. and its ready to serve.

If you really want to make it last longer, remove the potatoes and serve over rice instead.    Enjoy!
