Manicotti Stuffed with Wild Turkey Breast

Manicotti Stuffed with Wild Turkey is an easy and delicious entree that will leave you longing for more.

Serves 4-6


2 lbs of turkey breast trimmed of fat (roughly 1/2 of one breast)

1 box on manicotti noodles

1 lb of mozzarella cheese

3 14.5 oz cans of tomato sauce

1 4 oz can of mushroom pieces

1/2 tablespoon of oregano

1/2 tablespoon of basil

2 tablespoons of garlic

1 tablespoon of salt

3 oz of olive oil

In a 4 qt. pot.  bring  2 qt’s of water to a boil and add manicotti noodles and 1/2 tablespoon of salt.  Preheat oven to 350 degrees farenheit and cut the breast meat into sections roughly the size of the palm of your hand.  In a small mixing bowl, add 1/4 tablespoon of oregano, 1/4 tablespoon of basil, 1/2 tablespoon of salt, and 1 tablespoon of garlic and mix well.  Pour olive oil into a 10″ frying pan and heat on high.  Once oil is hot, rub meat with spice mixture and place breasts sections in the pan and reduce heat to med-high.  Cover and cook until well done, turning occasionally.  In a 9″x13″ baking dish, pour one can of tomato sauce to cover bottom.  When the manicotti noodles are cooked and the turkey is well done, drain the noodles and remove the turkey from the pan.  Slice the turkey against the grain into strips small enough to fit within the manicotti noodles.  Stuff the noodles with turkey, mushrooms and mozzarella cheese and line them up in the bking dish.  There should be enough for two layers of noodles.  Between layers add another can of sauce and a layer of mozzarella cheese and the remainder of the spices.  On top of the final layer, add last can of sauce, any remaining mushrooms, and the remaining cheese.  Bake in the oven for 30 min. and serve
