The bold flavor of this simple recipe is sure to have your taste buds sizzling whether it be used as an appetizer or the main course. A spicy little number to be enjoyed one bite at a time!
Ingredients (serves 1-2)
1lb of backstrap (approx. a 9″ section)
1 jar of whole mushrooms
sliced jalepeno peppers
1/2 sweet onion (sliced)
salt and pepper
3 Tablespoons of butter
Slice the backstrap into very thin (less than 1/4″) pieces perpendicular to the muscle grain. Wrap the backstrap slices around a mushroom and insert one jalapeno slice. Secure with a toothpick and place into a large bowl. Continue until all the backstrap slices have been utilized. Add a few shakes of salt and pepper to the bowl.
In a large skillet, melt butter and begin to caramelize the onion slices on medium heat. Add any remaining mushrooms you may have. Just before full caramelizaion is reached, add the buck poppers to the skillet and cover for approximately 5 min, stirring occasionally.
Remove the poppers from the skillet, pour onions over the top of the poppers and serve.
