Bacon Wrapped Wild Turkey

Bacon Wrapped Wild TurkeyThe perfect recipe for an appetizer, party tray, or Wednesday night dinner, wrapping wild turkey breast cubes in bacon may be one of the best things we have ever done in the DEER30 kitchen!  It is as simple as it is delicious and will have everyone impressed with your wild game skills.

1 wild turkey breast (cubed)

1 lb of sliced bacon

1/4 cup of olive oil

1/4 cup of Worchester sauce

2 tablespoons of white vinegar

3 tablespoons of brown sugar

3 teaspoons of salt

2 teaspoons of black pepper

3 tablespoons of garlic powder

Cube the turkey breast into approximately 1″ cubes.  In a large bowl, mix the oil, Worchester sauce, vinegar, 2 tbsp. of brown sugar, 2 tbsp. of salt, 2 tbsp. of garlic powder and 2 tbsp. of black pepper until evenly blended.  Add the turkey cubes and mix well to ensure good coverage.  Allow to marinade for a minimum of 1 hour.  Pre-heat your charcoal grill (or gas) to 300-325°F.  Cut the slices of bacon in half and roll each cube with a piece of bacon, securing with a tooth pick.  Once all turkey cubes are wrapped, take remaining salt, pepper, brown sugar, and garlic powder and sprinkle evenly over the top.

Place each piece on the grill and turn frequently.  It usually takes 10-12 min. to cook but be careful not to over do it.  When the bacon is fully cooked, the turkey inside will also be done.  Remove from the grill and allow to rest for 5 min before serving.
